Is it possible to create a universe over a service?
As far as I know you can only create universe over a database (supported types) and some very limited metadata (xml, etc)

I dont think you can define universe using web service.
Best way is get your service as a datasource in any of the free or opensource etl tool and store the data in Database and on top of that design your universe.
