Has anyone done testing on how many users a single cms with DEFAULT server configuration can support? Is there a paper/study available on this? Can anyone share their experiences?
Each of our 10 servers have 5000 mb of memory, 3.00 GHz of CPU, 1GB/s network speed

It depends a great deal on what you mean by “users.”
Each CPU can support 5-10 concurrent reports. Concurrent users simply navigating InfoView doesn’t seem to have much of a limit (however, their performance will be degraded if the CPU is taxed).
How well the RAM works depends heavily on how complex your reports are, and how big the data sets are. If you have people using BOXI to generate data feeds for local databases, you’re going to need a LOT of RAM. If you have well-built universes that give the users exactly what they need without a lot of needless extra data, you can get away with less.
As Sebastien mentioned, it’s probably best to bring in a consultant to help you out. There are lots of tweaks that can be done to the system to maximize performance that are not in the general documentation.
Take a look at the sizing guide. The last time I did sizing (or even looked at the info) for 3.x was back when 3.1 was still in beta. I know that for R2, many of these components sized up differently depending on the number of CPUs.
Also not sure if this is still the case for 3.x, but for R2 there was a public sizing guide and slightly more detailed version if you were under an NDA with bobj.
