Has anyone connected their universe to a SQL Server Analysis Server 2016 tabular model here. I thought I heard it was coming in the latest service pack. But I have not been able to find anything written on it. I can’t find hardly anything on connecting with SQL Server 2012 tabular either.

I built a universe in UDT many years ago over a cube and - like you - found little in the way of guidelines. As I recall, I couldn’t figure out how to create anything that wasn’t a simple direct representation of a measure or dimension in the cube.

Similarly for Essbase Hyperion cubes I have found it is a case of a few bits of information from SAP and a whole lot of digging, making mistakes, testing etc to make progress.
