I need to create some sort of file/email that will let someone know how many rows the query inside a scheduled Deski returns.
Can I create a report off Activity that looks at a scheduled Deski Instance and shows the amount of rows returned?
Can I burst a tab from inside a Deski to create files per tab? This way I have a second file with just the row counts?
We are using XI R2 SP5.

No, I’m afraid that you can’t, because XIR2 has very limited DeskI auditing capabilities. Normally you will find that type information in database system (profile, batch size etc), forward this question to DBA, may be he can bring some light on this…

Through Query builder I can find the information I need from each instance. But unfortunately I can not write a report for this.
