UDT is very limited in this respect. There is no support for parallel development or branch/merge.
If you have multiple concurrent changes, then one option is to create a copy of the universe and make the changes in the copy. Once tested and ready for implementation, you make the same changes in the original universe. This is pretty easy for newly-added content, but can get hairy if there are multiple changes to existing tables or objects.
What we had done in the past was to simply ensure that only one person was working on a particular universe during a release cycle – that person would be responsible for ensuring that each change was implemented, tested, and released appropriately.
